Ingredients

1 cup rolled oats

½ cup vanilla protein powder

1 tsp baking soda

½ tsp cinnamon

1 ripe banana (mashed)

¼ cup peanut butter or almond butter

¼ cup honey or maple syrup

1 egg

1 tsp vanilla extract

⅓ cup dark chocolate chips or raisins (optional)
Instructions

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

In a large bowl, mix oats, protein powder, baking soda, salt, and cinnamon.

In a separate bowl, combine mashed banana, nut butter, honey, egg, and vanilla.

Stir wet ingredients into dry ingredients until fully mixed.

Fold in chocolate chips or raisins if using.

Scoop dough into 12 cookies and place on the baking sheet.

Bake for 12–15 minutes, until edges are golden.

Cool for 5 minutes on the sheet before transferring to a rack.
